From the atolls of Kaukura and Rotoava on Fakarava, where bees forage kahaia, mikimiki, tiare tahiti and coconut blossoms across white-sand coral atolls far from modern civilization. This is a honeydew-and-coconut-blossom honey: at the turn of summer the atoll trees secrete sap, the bees gather it, and the result is unlike any nectar honey — darkly colored, highly aromatic, naturally rich in minerals.

Why it's rare: French Polynesia banned honey imports in 2011 — not to sell more honey, but to protect its bees. These islands hold some of the last varroa-free colonies on Earth, and the entire territory harvests only about 200 tons a year. Every jar is single-island, raw, and independently lab-tested.
