Tahaa grows 70–80% of all Tahitian vanilla — the air of the island is famously perfumed with it. Bees forage among vanilla orchids, tropical fruit trees and fragrant island blossoms, and small family apiaries harvest the honey with ancestral methods: no heat, no filtration, nothing added. Its very low moisture (about 12–18%) makes it dense, pure and naturally stable.
Why it's rare: French Polynesia banned honey imports in 2011 — not to sell more honey, but to protect its bees. These islands hold some of the last varroa-free colonies on Earth, and the entire territory harvests only about 200 tons a year. Every jar is single-island, raw, and independently lab-tested.
How to enjoy it: Beautiful by the spoonful, over warm toast or yogurt, stirred into tea, or beside fruit and pastries.
